Food insecurity solutions don’t have to be complicated—but they do have to be compassionate.
In Austin, Sunday Lunchbox is doing just that—tackling food insecurity and food waste all at once, with care, creativity, and community at the center of it all. Their team takes perfectly imperfect surplus produce—food that would otherwise go to waste—and turns it into shelf-stable meals for families facing barriers to fresh food access.
It’s practical. It’s powerful. And it’s deeply human.
Lindsay Snowden, Director of Operations, shared in a recent We Are Austin segment that 16% of Austin-area residents face food insecurity. But instead of being overwhelmed by that number, Sunday Lunchbox got to work—dehydrating, cooking, and prepping boxes of joy that are delivered straight to families.
“We’ve had families tell us their kids get so excited about the boxes,” Snowden said.
